A great, quick recipe
Preheat the oven (250° fan)
Cover a baking tray with baking paper
Wash the aubergines, yellow or green courgettes, and tomatoes
(ideally with some light vinegar; rinse well and dry using a tea towel)
Cut into 0.5cm slices
Cut the datterini or cherry tomatoes into halves or leave them whole
(Large beef tomatoes are very suited to this recipe. Cut them into fine slices)
Place them onto the baking tray
Lightly brush with oil on both sides and sprinkle with pizza seasoning
Top with a few fresh rosemary leaves
Cook in the oven for approx. 10 minutes
This recipe is a nice accompaniment to pure spelt pasta and can also simply be enjoyed as a light meal.
