Ingredients

500g spelt flour – 1 ½ teaspoons of salt – 1 tablespoon of sugar – 10g yeast (active dry yeast or fresh yeast cube) – 300ml oat milk, lukewarm – 60g plant-based margarine – extra oat milk for the bread wash

Preparation

Mix together the yeast and sugar (or fresh yeast and sugar). In a bowl, mix together the spelt flour and salt. Add the oat milk and margarine to a pan and heat until the margarine has melted. Briefly whisk and wait until the mixture is lukewarm. Add the yeast and oat mixtures to the ready-salted flour, stir and knead into a smooth dough. Cover with a damp towel and leave to rest for at least two hours. Form into either a plaited or standard loaf and let rise for another 30 minutes. Brush with oat milk. Preheat the oven to 220°C. Bake for approximately 30 minutes in the lower part of the oven. Baking time may need to be adjusted depending on the type of oven.
