Ingredients for 4 servings

  • 1 onion
  • 3 garlic cloves
  • 1 small piece of ginger
  • 2 carrots
  • 1 tbsp rapeseed oil
  • 1 tbsp red curry paste
  • 250 g beluga lentils or brown lentils
  • 1 can of sieved tomatoes
  • 1 can of coconut milk
  • 700 ml vegetable stock
  • 2 waxy potatoes
  • A little coriander
  • 1 lime
  • Salt, pepper and some olive oil for sautéing

Easy to prepare, healthy and tasty

Peel the onion and finely dice the garlic and ginger.

Wash, peel and slice the carrots.

Heat some olive oil in a pan.

Sauté the vegetables for a few minutes.

Add the curry paste and stir.

Mix in the lentils and deglaze with the vegetable stock.

Stir in the tomatoes and coconut milk and briefly bring to the boil.

Add the peeled and diced potatoes.

Allow the lentil curry to simmer for around 30 minutes.

Continually stir and add the remaining vegetable stock if needed.

Once it is ready, pour the lentil curry into a small bowl.

Season with lime juice, salt and pepper.

Wash the coriander leaves, carefully pat them dry using a tea towel, finely chop them and add them to the lentil curry.
